TOFU MAYONNAISE
Ingredients for Tofu Mayonnaise
* 1/3 c. sunflower seeds or raw rinsed cashews
* 12.3 oz. package silken tofu, extra firm
* 3 tbsp. lemon juice*
* 3/4 tsp. salt (or less to taste)
* 1/2 tsp. garlic powder
* 1 tsp. onion powder
* 2/3 c. water, more or less to desired consistency

How to Make Tofu Mayonnaise
1. BLEND Sunflower seeds or cashews with water.
2. ADD remaining ingredients, and blend until smooth.

VARIATION: When making Tofu Mayonnaise for a fruit salad, omit onion and garlic
powder and use pineapple juice instead of water.
Keeps for about a week in fridge.
*For SOUR CREAM, add one additional tablespoon of lemon juice.
